Well actually there are multiple games/sources that address it in a way.

Dark Forces 2/ Jedi Academy: when water droplets hit the saber, steam comes out.

Clone Wars: in the cartoon (not CGI) Clone Wars Kit Fisto lights his saber under water, it seems to "stir up" the water rather than cause it to steam and obfuscate everything.

So maybe it depends on the lightsaber?

And in JO/JA, if you throw it into the water, the lightsaber turns off and lands in the water.

Also what would happen if you dropped a lightsaber straight down into the ground? would it keep going till it hit the center of the planet thereby creating a passageway for all that molten stuff thats inside the planet to come shooting out like a fountain and bring the end of all life on said planet? O.o

1. Lightsabers have a button that has to be held down to keep the blade activated, so it would turn off before it hit the ground.
Though in robot chicken star wars that does happen "Oh MY GOD WHAT WAS THAT, THINK IT WAS A LIGHTSABER!"

2. Kit Fisto has a special lightsaber that works under water.

3. When water (rain) hits a lightsabers blade it turns to steam instantly.
